Kale Chips So Good It Will Make You Want to Slap Yo Mama, Her Mama and Her Mama

Potato chips. The one thing I have a very hard time giving up and I have to be honest, I still sneak one or two here and there. I often find myself wanting something crunchy and carrots and broccoli get old.

I was at the farmer’s market with my husband and while we were passing the produce area, kale caught my eye. Now kale can be hard to swallow. Literally. If you eat it raw it’s like it just gets stuck in your throat and there isn’t enough water in the world to wash it down. Juicing it is impossible. You have a better chance of getting blood from a turnip. However, kale is packed full of nutrients and I finally found a way that I enjoy eating it.

Kale chips! Once baked the super food takes on a totally different flavor. It’s a smoky flavor. I made some for my snack and remembered I forgot my water in the kitchen. I set the plate of chips on my coffee table and when I came back to sit down, my 3 year old and husband were going to town on them! Later that night I caught my 12 year old snacking on them too!  Not only did I find a way that I enjoy it but my family enjoys it too. WINNING!

My readers and fans asked for my recipe so here it is! I challenge you to add your own twist to it! Enjoy!

  • one bunch kale (any type you desire)
  • 1 - 2 tbsp Olive oil
  • 1 cloves garlic (more or less depending on your desire.)
  • 2 tsp Fresh thyme
  • 1 tsp Fresh rosemary
  • Salt to taste

  • Preheat oven to 350. Wash and thoroughly dry kale.Line a cookie sheet with aluminum foil. You'll want to make sure they aren't wet or crowded or they will steam. Use more than one cookie sheet if needed. In a small bowl combine the oil and herbs, minus the salt. Remove kale from stems and tear into bite sized pieces and place on cookie sheet. Drizzle oil and Herb mixture over kale. Massage it in until all kale is coated. It will be dark green. Bake for a 10-15 minutes or until crispy. Remove from oven and sprinkle with salt.
